As soon as the temperature starts dipping down below 70 degrees, I get chili on my mind! I love a good bowl of chili, but now that I make just about everything with my electric pressure cooker – you know I am making it in my IP!

Chili is one of those things that certain people like certain ways. I am including my favorite chili recipe – but have also including what we think are the best Instant Pot chili recipes, to make sure that you get that bowl of chili that you are looking for!

Beef Chili Instant Pot Recipe

I’ve made this beef chili for years. Previously I would cook in the slow cooker, but in recent years, we’ve adapted this for the Instant Pot. This is a quick chili recipe, but the beauty of the IP, you can gain more flavor by changing the Instant Pot mode to slow cooker. When you let the chili sit in slow cooker mode, it will bring out more and more flavor.

This is our family chili recipe and the beautiful thing is it’s very forgiving. You can add and subtract ingredients to make this the way you like it. If you need to make more, just increase the ingredients – though you may need an 8 qt Instant Pot if you make much more. I use a 6 qt Instant Pot and it suits my family just fine. Our beef chili instant pot recipe can be made in less than 30 minutes. We LOVE quick recipes, but this also tastes amazing when left in slow cook mode. Best Beef Chili Instant Pot Recipe

The best beef chili Instant Pot recipe - make this for the masses, perfect for a cold night or for eating while watching football! This recipe is hardy!

Ingredients

  • 1/2 bag frozen chopped onions use as much or as little as you like
  • 1 lb ground beef I use 90% - I know, not traditional for chili, but I try to reduce fat where I can
  • 1 can kidney beans either light kidney beans or dark kidney beans
  • 1 can black beans
  • 1 can chili beans or pinto beans work too!
  • 2 cans rotel tomatoes can use regular canned diced tomatoes for less spice
  • 1 can tomato sauce 16 oz
  • 1 cup water
  • 1 tbsp chili powder
  • 1 tbsp cumin
  • 1 clove crushed garlic or 1 tsp garlic powder
  • salt to taste
  • pepper to taste
  • cayenne pepper optional - 1/2 - 1 tsp

Instructions

  1. Set Instant Pot to saute

  2. Cook beef, onions and garlic together

  3. Brown the ground beef until no longer pink

  4. Add in all spices

  5. Saute for 2 minutes with spices

  6. Add in beans, tomatoes, and water - jump dump into the Instant Pot

  7. Push the manual button on your Instant Pot

  8. Let Instant Pot natural release

  9. The best beef chili is complete! 

  10. Not quite ready to eat? NO problem. Let it cook a bit longer for a more developed flavor. Stir and set Instant Pot to slow cook. With the slow cook function, the Instant Pot should stay on for 4 hours. Perfect for cooking ahead or if your family wants to eat chili thru-out the day.

Recipe Notes

If the chili it too thick, or if you are leaving on slow cook function, I add more water. This is a VERY forgiving chili recipe and you can make it your own. If you don't like garlic, don't add it! If you like more garlic, add it! Making chili in the Instant Pot is super easy and hope you find this recipe delicious! 

Chili Garnishes

To garnish, our family eats our beef chili with sour cream and cheese. Half of the family adds saltine crackers. The other half of the family adds Frito corn chips. If we have it in the fridge, I will add a little cilantro to give the dish a more Mexican food flavor. If I want it spicier, I usually add red pepper flakes.

Occasionally we will make cornbread to accompany the meal, but truth be told 9 times out of 10, I forget to buy cornbread. 

Growing up, my parents always served chili over rice. My family had mixed reactions to this, but this is just another alternative to serving this dish. The rice does make it even MORE filling. So if you need this dish to go a LONG way - add in rice.

Reheating Chili

How you eat it is up to you! This meal is versatile, very filling and gets better each time you reheat it! We typically throw leftovers into a pot and then put in the refrigerator. This lets us reheat the chili easily in just a few minutes on the stove top. 

 

Chili Leftover Recipes

As a mom, my favorite thing about chili is we make several meals out of it. In addition to chili, we also make chili-cheese burritos or chilitos, as our family calls them. Other chili leftover favorites include chili hot dogs and Frito chili pie. Needless to say, I make a lot when I am cooking it, it lasts about 5 days in the refrigerator or you can freeze for later.

The BEST Instant Pot Chicken Buffalo Ranch Dip Recipe – Perfect Appetizer!

Instant Pot Chicken Buffalo Ranch Dip was a HIT! Let me back up. Yesterday, we hosted a family get together with 23 people. It was VERY last minute, how last minute? 24 hours notice. It was a great time with lots of food, fun, laughter, kids and a few injuries but we survived. We made it happen and the hit was the chicken buffalo ranch dip. The Instant Pot made 4 of the dishes for our family meal, so if you haven’t already – make sure to check out our Instant Pot Recipes – we use these often!

I’m going to show you how to make this Instant Pot dip in less than 10 minutes. But don’t worry for the traditional folk, I also have the tried and true old school method, but done IP style. Let’s start IPing!

If you haven’t had chicken buffalo ranch dip, bless your heart. In all seriousness – it’s a yummy delicious dip and a great alternative to queso (there is nothing wrong with queso.) It tastes like buffalo chicken wings with ranch, but even better – it has were calling my name this weekend. This dip has been a regular in our parties for years. It all started when my sister-in-law made it for a party and then our friends started making it, now we always chuckle when we see it.  You can make it spicy or well it will still have a kick, but you can most definitely tone down the heat (or turn it up! I like it HOT!)

Gotta love Franks Red Hot sauce! Use as much as you want to make the Instant Pot Chicken Buffalo Ranch Dip as hot or mild as you like. (It will still be somewhat hot with this stuff!)

I’m including 2 Instant Pot Chicken Buffalo Ranch Dip Recipes here. One is if you want to make this dip the more traditional way – but I occasionally use a hack to save time and i’ve included that recipe here – keep scrolling to read!

Traditional Instant Pot Chicken Buffalo Ranch Dip

Here are the ingredients for making our Instant Pot Chicken Buffalo Ranch Dip Recipe:

  • 1 lb chicken (season to your liking with salt, pepper, garlic) 
  • 1 package cream cheese
  • 1/2 bottle Franks Red Hot Sauce (Franks buffalo wing sauce works as well)
  • 1/2 bottle Ranch dressing
  • 1 cup of water or chicken broth
  • 8 oz shredded cheddar (either mild cheddar or sharp cheddar will work!)
  • Tortilla Chips or Fritos (I prefer Tortilla, my kids love this with Frito Corn Chips!)

Place 1 lb seasoned chicken in the Instant Pot with 1 cup of chicken broth or water. Next, close the lid – make sure you are sealed and set the IP for 12 minutes. If your chicken is frozen, I would up the time to 15 minutes. 

Note: By the time the chicken is pressurized, it will take around 25-30 minutes. 

After your Instant Pot dings, quick release the seal. Next, is the easy part. You can either shred the chicken first, or what I do is just dump all of the ingredients and stir. So take your cream cheese, shredded cheese, ranch dressing and Frank’s Red Hot Sauce and mix your dip together! That’s it!  

I make this ahead of time, and then put the Instant Pot on slow cooker. This keeps the dip warm, without burning. I had 2 hours before my party, I did stir a few times just to make sure all was well (and it was delish!)

QUICK Instant Pot Chicken Buffalo Ranch Dip – Less Than 10 Minutes to Make!

If you are in a hurry and need a quick dip, the Instant Pot chicken buffalo ranch dip will not fail you with this hack! That’s right, this will take less than 10 minutes to make! WINNING!

  • 2 cans of chicken (season the chicken with salt, pepper, garlic to your liking)
  • 1 package cream cheese
  • 1/2 bottle Franks Red Hot Sauce (Franks buffalo wing sauce works as well)
  • 1/2 bottle Ranch dressing
  • 8 oz shredded cheddar (either mild cheddar or sharp cheddar will work!)
  • Tortilla Chips or Fritos (I prefer Tortilla, my kids love this with Frito Corn Chips!)

In my hurry, I really didn’t want to cook ANOTHER meat. I mean we had 24 burgers to get prepped! I looked into our cabinet and we had 2 cans of chicken that I had bought at Sams Club. I hadn’t used these in forever. The good news, is the expiration on these is forever out. I don’t use often, but SO it is so worth keeping these handy for last minute needs. Anyways, on to the recipe!

Empty the water out of the 2 cans of chicken. Place the chicken in the Instant Pot. Season the chicken well, canned chicken is so bland. And the smell – let’s mask that smell! 

Next, you will put your Instant Pot on sauté . You will sauté your chicken for 3-4 minutes. Since the chicken is cooked, you are just warming up the chicken and getting the pot hot. 

Then, place all of the ingredients in the Instant Pot. With this quick recipe, you don’t need the chicken broth because there is no need to pressurize. 

Stir the ingredients quickly, as you don’t want anything to burn. You are just melting the items together. 

Finally, when all of the ingredients resemble the Chicken Buffalo Ranch Dip – you will turn the IP off, and then back on with the Slow Cooker function. 

Instant Pot Chicken Dip and Chips

Use tortilla chips or corn chips, either way – this instant pot dip does NOT disappoint!

When you are done, serve in a bowl – garnish with a little shredded cheese and serve with tortilla chips or corn chips. YUM! NOM! 

Instant Pot as a Slow Cooker 

I don’t use the Instant Pot  as a slow cooker often, but this function comes VERY handy when you need to heat up an item and leave it. It doesn’t work with every meal, but when it works – it works!
